ISSUE 07 · THE COCOA NUMBER

Stories from the wrapping room, the farm, and the tasting table.

The Story of Cocoa

Cocoa begins as a pod the color of traffic lights and fairy tales. Inside: beans that smell like nothing much until heat, time, and human stubbornness turn them into flavor. We buy from farms we visit, pay for quality, and roast as if the bean can hear us.

Ghana gives us fudge and red fruit. Ecuador gives us flowers. The Dark Lab keeps notebooks like love letters.

How Chocolate Is Made

Roast. Winnow. Grind. Conche until the mass forgets it was dusty. Temper so the snap sounds expensive. Mold. Wrap. Repeat, but never on autopilot. Visit the factory page for the seven-step belt.

Milk vs Dark Chocolate

Milk is a hug. Dark is a conversation. White is a vanilla cloud wearing cocoa butter. None of them are morally superior. The Duo Box exists because households are democracies.

Inside Our Chocolate Factory

Steam at 7am. Hazelnuts by 8. Someone always singing off-key near the wafer oven. The conveyor is not a metaphor. It is a belt, and it is slightly sticky on purpose.

How We Create New Flavors

Tasting room rules: no perfume, no spicy lunch, yes to arguing. Failed batches become staff snacks. Accidents (toasted milk powder, extra mint) become legends. The builder on the site is how customers join the argument.

Chocolate Pairing Ideas

Midnight Seventy with espresso. Strawberry Cream with sparkling water. Sea Salt Dark with a movie you have already seen. Mint Forest after anything involving garlic. Caramel Tide with a rainy window.
